Unser Pojega Ripasso ist ein trockener und großzügiger Wein. Wir empfehlen, ihn bei 16°C zu gebratenem Fleisch oder Wild, gefülltem Kalbsbraten oder Rindertartar zu servieren.
Das Weingut Pojega in Negrar befindet sich neben dem berühmten Garten, der 1783 von Graf Antonio Rizzardi angelegt wurde. Ripasso ist eine traditionelle, einzigartige und streng kontrollierte Weinbereitungsmethode , er wird nur mit Trauben aus dem Valpolicella-Gebiet hergestellt. Der Name Ripasso leitet sich von “rifermentazione”, Nachgärung, unseres Valpolicella ab, der mit Pojega-Trauben aus den Trestern unserer beiden Amarone gewonnen wird.
Nach der malolaktischen Gärung reift der Wein 12 Monate in französischen Barriques.
